Innovative! UNDIP Community Service Program (KKN) Students Create Fish Nuggets and Snack Bars to Prevent Stunting

Nguter (August 13, 2024) – Students of the Community Service Program (KKN) Team II from Universitas Diponegoro (UNDIP) in Nguter Village, Academic Year 2023/2024, have developed an innovation to help reduce stunting rates in Nguter Village, Nguter Subdistrict, Sukoharjo Regency, by processing fish into nuggets and vegetables into snack bars. This initiative was launched due to the presence of stunting cases in the village.

According to routine surveys and observations conducted by the village midwife and Posyandu (integrated health post) activists in Nguter in June 2024, 18 out of 277 children under five in the village were identified as stunted. This data covers children aged 0–5 years. Additionally, reports indicate cases of malnutrition among children over five years old, highlighting the need for comprehensive nutritional interventions.

The stunting prevention program by KKN Team II Nguter Village was carried out on Wednesday, July 24, 2024, at the “Tunas Bangsa” Inclusion Center in Nguter Village. It involved the following:

  • The Aquaculture Program (Faculty of Fisheries and Marine Sciences)demonstrated how to make fish nuggets from a blend of catfish and tilapia, which are rich in animal protein, omega-3, and vitamin D.
  • The Industrial Chemical Engineering Technology Program (Vocational School)demonstrated how to create snack bars made from red rice flour and ginger powder, which are high in fiber and plant-based protein.
  • The Public Administration Program (Faculty of Social and Political Sciences)provided a presentation on the causes, impacts, dangers, and solutions to stunting.

The event began with an educational session on stunting’s causes, impacts, dangers, and prevention and concluded with the distribution of fish nugget and snack bar samples to participants, primarily mothers and children from the Posyandu and the inclusion center.

This activity is part of a multidisciplinary project by KKN Team II UNDIP Nguter Village titled “Food Innovation Education: Fish Nuggets and Snack Bars as Nutritional Fulfillment Efforts in Addressing Stunting.” Recognizing that not everyone can consume fish and vegetables in their original forms, such as fried fish or soup, this innovation was designed to make animal and plant-based nutrients more accessible to children. The initiative aims to spark interest in consuming fish and vegetables, helping to meet essential nutritional needs.
